Taco Pie

Mine was a mess this time... but amazingly delicious!
You'll never eat tacos the same way again!  At least we haven't.  With this cheesy, delicious pie, we no longer eat traditional tacos around here.  This is consumed (eagerly) with a knife and fork, and uses less tortillas than tacos.

Now, the best thing about this recipe is it leaves a lot of room for customization.  Jeff and I have very different ideas of what goes in a taco.  I think the spicier the better, but he wouldn't enjoy that much, so we keep our taco pie very basic.  Remember that you can add whatever you'd like to yours!


Taco Pie

1-2lb ground beef (or turkey if you're so inclined)
Taco seasoning (and as much water as your seasoning packet calls for)
1/3 cup salsa
1/2 cup shredded cheese
2 large tortillas
Enough cheese to cover the top (roughly 2 cups)
Suggested Toppings:
Shredded lettuce
Jalapenos
Diced onions
Diced tomatoes
Sour Cream
Guacamole

  1. In a skillet, brown your ground beef.  If there's an excess of grease, drain before moving on.
  2. Turn heat down to low.  Mix in taco seasoning.  Use some water to help the seasoning mix in, but don't get carried away.  You don't want to have taco soup.  Stir in salsa and cheese until creamy.
  3. Preheat oven to 350 degrees.  Grease a 9-in pie plate.  Line the pie plate with one large tortilla.  It should be large enough to cover the bottom and sides of the pie plate.
  4. Pour half of the meat mixture into the pie plate.  Cover with the second tortilla.  I cut some of the edges off so it's not touching the edge of the pie plate.
  5. Pour the rest of the meat into the pan and cover with cheese.
  6. Bake for 25-30 minutes or until cheese is melted to your liking.
  7. Top with your favorite things and consume!
